Considering Boba Fett had apparently died in Return of the Jedi, Darth Maul had seemingly died in Star Wars: Episode I - The Phantom Menace, and Palpatine’s body died in Return of the Jedi before all three characters returned in later installments, it’s not completely out of reach to say that Mace Windu could have survived his own fatal fall. While Mace Windu was part of Star Wars’ prequel trilogy and not the original movies’ timeline, he could still appear in Boba Fett's post- Star Wars: Return of the Jedi timeline.
